(More customer reviews)This mix saved my life. After being diagnosed with celiac disease, I tried all the "great" gluten-free bread machine recipes I could find (I am awful at baking bread by hand). They were all uniformly and unequivocally TERRIBLE. They were dense, didn't rise properly, caved in at the top or sides, etc etc etc. They also all tasted very gluten-free.
This mix, though is wonderful. It rises, sticks together very well for a fluffy gluten-free bread (it still has the tendancy to fall apart if not toasted), makes wonderful croutons and stuffing, browns properly and only occasionally caves in a little bit.
Things I have learned with this mix that help it a great deal:
1. Let the loaf sit in the bread machine for at least 20 minutes after it stops baking. (I have the standard Oster bread machine that was popular when the bread machine rose to popularity.)
2. Make it with rice milk. To me, cow's milk and almond milk taste funny with this recipe.
3. Let it cool for a good long while, it is very moist and will fall apart if you try to slice it immediately.

(More customer reviews)I've fed these to quite a few wheat-eaters, and they see no difference between these and other cookies. I have tossed in various combinations of nuts, dried blueberries, chocolate chips, and coconut and cooked them as bar cookies. Everyone loves them. They disappear within 24 hours of baking.
Namaste makes the BEST GLUTEN FREE FOOD on the market that I've found. If I had to suggest some food products to someone who was starting the transition from a diet including wheat to a wheat-free diet, I'd recommend Namaste's products. I've never had a bad product from them. Try also their pizza crust, spice cake mix, and chocolate cake. It's all fantastic.

(More customer reviews)I am gluten free and vegan AND I have a sweet tooth BUT I'm trying to avoid eating too much sugar. It's a dilemma! I like to have a few cookies with my coffee or tea and these fit the bill. They don't have a lot of sugar but they are still sweet enough to feel like you're having a treat. The label bills them as having fiber but they don't have as much as you would think. Still, I'm not eating them for fiber's sake but as a snack.
Another thing I do like about these is that they can be used to make a really nice gluten free cookie crust for pies. It's hard to find a gluten free cookie crust but I found griding these up in the processor, mixing them with some melted butter and baking in a pie pan sets up a great crust for key lime pie, etc. So I'm making the most of these little cookies!
I didn't give them 5 stars because they're a bit pricey but I would buy them again.

(More customer reviews)We're picky about our gluten-free baked goods, especially since we can't use eggs. This mix was very successful without eggs, baked as muffins. The flavor is like a sweet cornbread, but lighter in texture. And it's wonderful with a quick lemon glaze ...and better yet with fresh berries. I suspect it will make an excellent strawberry shortcake, too.
Note: I used a variety of egg replacer for 2 eggs, plus a bit extra Ener-G egg replacer, used milk instead of water, tossed in 2 Tb nonfat dry milk for extra yum/protein. Baked at suggested temperature, 25 minutes.

They have a texture that is a tad light for brownies- more like chocolate cake, but good flavor. Be sure to either eat them the first day or freeze leftovers. Like most gluten-free goodies, they become gritty after sitting out for a day.

They have great taste and texture and don't crumble in to peices when you try to make a smore with them. Because these are so thick I don't know how well you can crush them up for crusts. But if you had a food processer I am sure you could do it. I have tried the chocolate, cinnimon, and regular and love them all. As do my kids. You won't regret getting these. mmmmm mmmm good.

This Namaste line of products are the only ones I have found to taste almost exactly like the real thing! I put a teaspoon of vanilla in the liquid mixture(along with using an egg substitute of flaxseed and water), and I added cinnamon to the dry mix and I baked them 10 minutes longer than the package said, and came up with THE BEST Gluten free, allergen free muffins I've ever tasted - they actually tasted like little cakes! I sprinkled sugar and splenda on top. I can't praise this product enough!!!

With these buns I found they needed to be microwaved to really get a hot dog bun taste to them. However, what I found to be even better is that with the size they looked more like hoagies to me, so of course I had to make hoagies and steak and cheese sandwiches with these!!! I made the steak and cheese, then I put the sandwich together and into the oven. OMG!!! I will never buy anything else again!! I know some people just want hot dog buns, but I found a better use for them. My kids still love to have their hot dogs on these buns, but I prefer them for steak and cheese. I am happy and the kids are happy. Some people complain because these are not precut, ummm, so what!?! if you have a knife you can split them the way you want:) these are also great for making pizza. I know these are hot dog buns, but I really dont like hot dogs so found other uses. again my kids love them with hot dogs!!

I have found the following additions to the mix, make this cake EXCEPTIONAL. 1/4-1/3 cup ground almonds/walnuts/mixed; 3-4 tablespoons of good quality Coco Mix; 1-2 extra tablespoons of water; and turn down the oven temperature to 335 F. after 15 minutes and extend the bake time 10 minutes [40 total min.]. The basic mix has great potential for nut and berry combinations that are compatible with rich chocolate. Ice with Coco-whipped cream, refrigerate.

(More customer reviews)The first time I had these, I was at a party and a plate of brownies passed by me -- and I said "no thanks, I can't eat wheat." The lady said "but these are gluten free" and I said "Yeah right." They looked like real brownies, and smelled (oh man, did they smell) like real brownies. She came back with the woman who made them who assured me they were. So I tentatively took one and entered into a state of nirvana that only a brownie after three years of abstinence can provide. WOW.
I've since used this mix as my contribution to the goodie table at a half dozen parties and pot locks, and they are devoured quickly... no one knows they are gluten free.
Not only are they that good, they are also easy to make (add an egg, some water, beat, bake) and easy to freeze (a package makes, I think, 16 brownies). I'm sure they carry all the caloric implications of real brownies but it sure is nice not to feel deprived from treats!

(More customer reviews)This is my favorite cake and muffin mix. It makes a very nice dense cake that no one would guess is gluten-free! I feel most oils are a more nutritious alternative to dairy-free margine, so I always use a different oil (walnut, almond, grapeseed, etc) and they all turn out delicious. I also substitute different sweeteners for the sugar such as maple syrup, honey, yacon syrup, date sugar, and coconut sugar and have been consistently very pleased. The bag also offers variations to make: pineapple upside-down cake, coconut cake, orange cake, lemon cake, ginger spice cake (one of my favorites!), marble cake, pumpkin cake, carrot cake, zucchini cake, banana cake, applesauce cake, snicker doodles, mexican wedding cookies, thumbprint cookies and pie crust. (More customer reviews)i have tried 3 pamela's products: the brownie mix, the pancake mix and the bread mix. first the brownies -- best i've ever tasted - i'm addicted to these things! i tried doing the applesauce substituted for oil and i don't recommend that - the brownies were too dry. the oil recipe is definitely the best -- also substituting espresso for water was yummy -- the pancake mix is really good too. i've made the pancakes and the waffles - the waffles are the best i've ever tasted, with or without gluten. my co-worker used the pancake mix as a substitute in a regular recipe that called for all-purpose flour and said it worked great. finally, the bread - my friend made me a loaf of bread in her bread machine and it was pretty good --not dry like most gluten-free products. the only thing was that when i tried to toast it, the bread remains moist - it won't toast! weird...anyway, i recommend all three products and buying them off amazon will save you $1.50 - $2.00 off the package price at the supermarket! A++++ on these products!
