(More customer reviews)I ordered these as an alternative to high glycemic-index, calorie/sugar rich pancakes (which I love), enticed by the whole wheat and protein advertised but still pretty skeptical. I was pleasantly surprised to find that these are really delicious--they take a little longer than normal pancakes to cook, thanks to the thick consistency created by the cottage cheese, but they taste really good and are very good for you (if you use fat-free cottage cheese and egg whites instead of the usual ingredients, its even better for you and still tastes great). I spread mine with sugar-free strawberry jam and douse them with sugar-free syrup: perfect!
What's more, after two medium sized pancakes (the smallest recipe size on the box makes about four medium pancakes) you're really full, so you don't need much mix to make yourself and a friend some healthy breakfast!

(More customer reviews)This is a very good substitute for real pancakes. I'm celiac and have tried some truly abysmal rice pancake mixes, but this buckwheat is wonderful. I make it with a pinch of salt and use buttermilk, and it's even more like Bisquick taste. On my first attempt and just mixing by guess it made a very respectable crepe by thinning with milk and a little International Delight cinnamon hazelnut coffee creamer. It's near impossible to burn, much more forgiving than wheat to extra heat. I can't imagine what the pan review was tasting but it wasn't this mix.

Kinnikinnick Foods Gluten-Free Pancake & Waffle Mix, 23-Ounce Bags (Pack of 6) Review

(More customer reviews)This mix makes the best tasting waffles. The batter smells like vanilla; the waffles are crisp on the outside and chewy on the inside. For pancakes, the mix is a little thin and you must use more of the mix than you might need to use of some other gluten free packages, but the waffles are more than worth it. Mix is very easy to use and recipe can be cut in half using while still using a whole egg as in the larger recipe.

(More customer reviews)I was sick of eggs. And sick of cornflakes. So when I spotted the Pancake mix from Bob's, I had to try it. Like all of their products, it was really easy to make - just like any pancake mix. The first batch I made, however, were... well, let's say "Dense." I was feeding a guest, who clutched his throat and asked for liquid to wash it down. But I didn't think they were THAT bad, considering the wheat free sludge I'd engaged before. So, I drowned mine in maple syrup and thought it was quite tasty.
The next time, I tried modifying the recipe a bit with fruit - fresh blueberries to be exact. And those came out a lot moister and less dense. Mmm... blueberry pancakes... wonderful! I've tried other fruit, tossed in applesauce once... and each time, I got interesting twists on much moister pancakes.
I still don't eat them often -- just when I'm having a "help, I can't eat another egg" moment. Actually, they are good as part of a big brunch, with an egg over easy on top. Since can't eat bread with my eggs, it takes the place of toast.
I've wondered if whipping these frothy with a beater might help but haven't tried it yet. All in all, they're tasty, if a little thick, very filling and easy to whip up.
