Once cooled, I prefer ready-made cookies Andean Dream Cocoa-orange Gluten Free Vegan Cookies and Pamela's Products Organic Dark Chocolate Chocolate Chunk Cookies, 5.29-Ounce Boxes (Pack of 6).
This recipe calls for dairy-free margarine but I prefer to use various oils such as almond, walnut, or grapeseed. Be careful not to overbake for even one minute or they are crumbly!
Any leftovers are great frozen and reheated in microwave so that the chocolate chunks are melty-gooey!
Also has a recipe for bar cars where you add coconut milk and flaked coconut which is excellent.
