Fabulous thin pasta that cooks in three minutes. Its wonderful with pesto or marinara or even with a little butter, grated parmesean and ground pepper. Its just like the pasta we ate in Italy. Its crazy expensive and addictive. Buying a dozen boxes at a time is a great money saver.

Wait to boil, then deep the pasta in the water and stir gently at first. Let it boil the time specified on each box. Maybe a little bit more. Egg pasta needs to be ductile. That's the way we like it. Strain off all the water well. Add condiments in the same pot you have used to boil.

For those pasta aficionados, do not miss this pasta. It is hard to explain how it can be so different from any other pasta, but it is. To say that it is very, very thin does not explain well enough its unique texture and flavor. It is exceptionally light, and holds sauce beautifully. I can only say "Try it, and you'll know what I mean."
