My niece lives with several sever food allergies including eggs and nuts. This can make baked items and special holiday meals difficult to prepare for her. This product has been a great replacement in eggs for many baked items. The only difference I have noticed is that in items with a more subtle flavor there is a slight tapioca flavor provided by this product. In more strongly flavored items there is no noticeable difference. I have served baked goods with this product to larger groups of people with rave reviews.
I have tried to use this in other recipes that call for eggs, namely pad thai, and it did not work well. It created a gummy texture and muddled the flavors of the dish.
I highly recommend this product as an egg replacer for baked goods.
